Introduction to Fundamentals of French Cuisine
Step into the kitchen and discover what makes French cuisine the foundation of culinary arts worldwide. This 2-week immersive program is designed as a first taste of professional cooking, a chance to experience the professional restaurant atmosphere, creativity, and joy of preparing dishes the French way.

Over the course, you’ll get hands-on training with the essentials: learning knife skills, preparing stocks and sauces, cooking vegetables with precision, and trying your hand at fish, poultry, and simple meat dishes. You’ll also explore French classics such as onion soup, quiche, blanquette de veau, and other timeless recipes that showcase balance, flavor, and technique. Every session combines instruction, practice, and tasting, ensuring that the kitchen is not only a place of skill-building, but also of enjoyment and connection.
The course also introduces you to the culture of a professional kitchen - how to organize your workstation, use essential tools, and work with confidence. By the end, you’ll leave not only with new skills but also with a deeper appreciation for French culinary traditions and the satisfaction of having created and tasted them yourself.

Professional Certificate in French & Balkan Culinary Arts
The French & Balkan Culinary Arts Program is a 19-week intensive course designed for students, who want to develop strong professional cooking skills, while exploring two culinary worlds side by side.
Duration: 1 Semester (19 weeks, 665hrs)

In the French Cuisine module, you will build solid foundations: knife skills, stocks and sauces, vegetable preparations, fish, poultry, and meats[IK1] . Guided step by step by experienced chefs, you will learn the to experience the professional restaurant atmosphere, organization, and methods that define classical French cookery, skills that remain the backbone of professional kitchens everywhere.
In the Balkan Cuisine module, you will discover the authentic flavors of Bulgaria, Greece, Serbia, and Turkey. Working with celebrated local chefs from each country, you will prepare rustic stews, seasonal vegetable dishes, grilled meats, and traditional breads and pastries. You will also explore how to combine Balkan authenticity with French technique through creative fusion menus.
Alongside hands-on training, the program includes theory in entrepreneurship and food business basics, helping you understand how to manage supplies, organize a kitchen, and plan menus.
The curriculum also includes photography basics and social media mastering - essential skills to become the future food influencer. This components prepares you for the EU Professional Qualification Level of Culinary Chef, giving you credentials recognized across Europe & worldwide.
